It has been a bit of a time lag with the wet , coolheaded and rainy garden time of year we have experienced here in Ohio – but the heat , humidness and cheerfulness have finally arrived – and along with it –   the tomato   are beginning   to mature .   That can think only one thing – Canning time of year is about to get as well in full force !

The Lycopersicon esculentum harvest is by far the most important we grow in our garden – avail to stock our larder full of tomato succus , diced Lycopersicon esculentum , salsa , pasta sauce , pizza pie sauce , ketchup and barbecue sauce just to name a few .

By former summertime –   the   tomato plant harvest time has also filled our   Deepfreeze full of habitation - made chili , vegetable soup – and my personal favourite – Mary ’s heirloom tomato soup !

Fresh tomatoes from the garden!

We use the first few harvest of Lycopersicon esculentum from the garden to make our succus and salsa   – early season tomatoes   are usually more plump and gamey – and lend themselves perfectly to those recipes .

We then make our pasta sauce , pizza pie sauce , bbq sauce , ketchup and soups with the tomatoes harvest in mid to late summertime .   The by and by tomatoes tend to be a little thick walled and meaty from the former summer oestrus –   do them great for sauces and soups .

TOMATO JUICE

Nothing beats the taste of home - made love apple succus !

Canning juice is one of the   most unsubdivided and delicious way to keep your tomato – and is a great fashion to start for those new to put up .

We make both even succus and a hot and spicy V-8   style rendering to have the twelvemonth around . Canned juice is a peachy base for chili con carne , pasta sauce and more – score it a valuable summation to your pantry

SALSA

We   go through a lot of salsa !   It seems that one of our kids are opening a jar every time we turn around ( or haul a few off with them to college ) .

We make and can both picante ( a thinner version ) and traditional salsa , along with live and mild versions .   draw your own salsa is a great way to cut out preservatives and excess sodium from the store - bought varieties !

Nothing can beat the gustatory modality of dwelling house - made pasta sauce ! The impudence of home - grown tomatoes , peppers and garlic fill the sauce with a flavor and texture that can not be matched !   The same exit for homemade ketchup , bbq sauce and pizza sauce .

Just like with the salsa –   pretend your own sauces at home also cut out all of the preservatives in the store - bought versions .

We would be lose without those quick , go - to meals that soups from the freezer put up in the fall and wintertime calendar month .   Chili soup , vegetable soup , and tomato soup made straight from the garden are not only simple-minded to create – but so much goodish than anything you could ever buy in a store or eating house !
